Spanish Omlette and Red Wine

Last night I had this free ticket to go to CCP fanfest and listen to bands like FM Belfast and Booka Shade. I wasn’t really in the mood for going out, so I gave my friend the ticket (made him really happy) and had a lazy night in. Around midnight I got hungry…damn, nothing in my fridge! But hey! Found some eggs and potatoes, perfect! I’ll make us a spanish omlette…even better, we had a bottle of red wine (Benchmark Shiraz)

People tend to think these kind of omlettes are really hard to make, but that is just not the case. Simply fry up some onion (1), garlic (2 cloves), (1 chili if you fancy it) and some thinly sliced potatoes (500-800gr.) in a lot of oil.

Iv’e been told that you have to dry the potatoes before you fry them…I don’t, and I don’t taste the difference.

While everything is getting soft and nice in the pan, take a big bowl and smash some eggs (6-8) in there, with a teaspoon of salt and some pepper and whisk it.

When the onion and potatoes in the pan are soft, put them in the eggbowl and stir together. Put more oil on the pan and pour the egg-potato mix in there.

Fry over low heat for like…umm 5min and then turn off for 5min, do this a few times…maybe 3 times. After it’s been on for like 15min put a plate over the omlette that fits perfectly inside the pan. After about half an hour take a dishcloth and place over the plate, turn the pan around and slide the omlette back in the pan the uncooked side down of course. Keep cooking it off and on for about 20min.

I served it with baguettes with grated tomato, olive oil and salt. Tasty stuff! And it makes really nice leftovers.
